Salame Piacentino PDO

Our salamis are made with the finest cuts of pork from pigs born and raised in Emilia Romagna and Lombardy: ham, shoulder, lard, jowl, and belly—all the parts needed for a perfect balance of lean and fat. Coarsely ground as tradition dictates, with the addition of a little salt, just the right spices, and strictly hand-tied. The Salame Piacentino PDO produced and cured in Val Tidone is one of the most sought-after traditional products from our land. Ideal for a tasty break during the day, as an appetizer, or for a snack with friends, it is encased in a natural casing and covered with its own curing mold. It has a sweet and delicate flavor with a characteristic fragrant aroma. The first documents linking the Grossetti family to cured meat production date back to 1875, with Pietro Grossetti's shop in Pianello Val Tidone, but oral history and accounts go back even further. Until the post-World War II period, cured meat production in Val Tidone was tied to the rhythms of the seasons and nature, to rural life and the local shop. There were no large meat processing plants, only artisanal workshops where, year after year, the same gestures were repeated as they had been for centuries in country homes. The "pork butcher's ritual" of seasoning the meat is an ancient tradition tied to the livelihood of farming families; over time, the trade was also entrusted to shops where traditions were preserved and skills were honed. The Grossetti family, generation after generation, also managed their artisanal butcher shops in Pianello Val Tidone, becoming a point of reference for those looking for excellent quality cured meats and leaving their mark on the history of Val Tidone's cured meats with their work.
